The owners of a wholesale bakery and a local coffee house are planning to open a joint location on the city’s West Side.
Nick Van Liere and Becca Van Liere, husband-and-wife co-owners of Rise Authentic Baking Co., and Mallory Squibb and Dennis Squibb, father-and-daughter co-owners of Squibb Coffee & Wine Bar, will open a new bakery and coffee shop this winter at 1220 Fulton W in Grand Rapids.
The space, which the businesses have leased from Chad Koster, of Grand Rapids-based Paramount Realty Partners, is undergoing renovations.
“We are looking forward to joining the West Side and creating a comforting and welcoming space to share with old customers and new,” Mallory Squibb said. “Our concept and aesthetic is something not being done in Grand Rapids, and we are eager to share it with the city.”
Once open, the new shop will bear both companies’ names and be managed by Mallory Squibb and Nick Van Liere.
Becca Van Liere will continue to take custom orders and manage wholesale relationships for Rise Authentic Baking Co., which opened in 2014 and has been operating out of the kitchen at Crossroads Bible Church in Grand Rapids, at 800 Scribner Ave. NW. The bakery will continue its current custom wholesale ordering system, with pickup offered at the West Side storefront.
Squibb Coffee & Wine Bar will maintain its original location at 955 Wealthy St. SE, which opened in 2016.
Squibb plans to hire two new employees. Rise will also add two staff members, and its current baking staff will work out of the new location.
Squibb will continue to serve coffee and tea, but it is also planning to expand its menu into “more curated vegan options,” Mallory Squibb said.
Rise will remain “completely vegan, gluten-free and soy-free” and offer grab-and-go baked goods, cake and cheesecake by the slice, cupcakes, handmade granola and bread, as well as sugar-free and “health-focused basics.”
Rise also plans to offer a small menu of other food items.
