A café business in the region has set up a $1-million concept location to help facilitate franchising.

Brooklyn Bagels Café will open a 3,200-square-foot franchise flagship shop on May 31 in Muskegon, at 2111 E. Apple Ave.

The shop will be a proof-of-concept location for the potential launch of a new franchise, Brooklyn’s Beans, Bombers, Bagels — and act as a sample for future franchises.

Denny Dyer owns Brooklyn Bagels Café with his wife, Cookie, and operates it with their sons, Trent and Trevor.

The brand's menu features bagels and custom-roasted coffees, along with cold-brewed nitro coffee, smoothies, frappes, tea, muffins and bombers.

The new café will employ between 25 and 30 employees.

The company has been training employees to work at the new location for the past three weeks at its two other locations in Muskegon.

Franchise fees cost $15,000, and there are three models of the café, including the concept shop: a full production option if a franchisee commits to multiple locations; a dry store that bakes and delivers; and a wet store where product is baked.

The first Brooklyn Bagels Café opened in 2001 in North Muskegon and a second café was opened in 2007 in Roosevelt Park.

Frequent requests for franchises led to the development of the new concept café.

“We have been getting requests from folks interested in becoming part of our program almost since we opened 15 years ago,” Denny Dyer said. “The new Brooklyn’s will give us a chance to show them what they can do.”

The new shop was designed by Tria Architect and built by Muskegon-based DL Morse and Associates
