A downtown restaurant is getting a new chef.
Cygnus27 in the Amway Grand Plaza said today Stephan VanHeulen has been promoted to chef de cuisine.
VanHeulen is replacing Tim Moreno, who'ss moving on to “world-famous restaurants” in New York.
Moreno laid the foundations for the transition to Cygnus27’s recent Latin-inspired menu and dining experience, which VanHeulen will now build on.
VanHeulen said he plans to establish more relationships with local farms and increase the amount of local food used in Cygnus27 dishes.
“I love sourcing fresh seafood and local ingredients from nearby farms, and I plan on incorporating this even more into my menu this year,” VanHeulen said.
VanHeulen, who attended the GRCC Secchia Culinary Institute, began his career at AHC+Hospitality, cooking for restaurants within the group’s portfolio in Grand Rapids, which includes Cygnus27.
He was named sous chef of Cygnus27 in 2016.
VanHeulen said he found his love for cooking at 15, preparing his twists on classic seafood dishes for his family.
While at the Secchia Culinary Institute, he developed an interest in “unique techniques in food preparation, specifically using local Michigan ingredients.”
