‘Health-casual’ restaurant chain picks next location

A chain of “health-casual” restaurants has selected a major retail corridor in town for its second location in West Michigan.

Freshii announced that it plans to open another location in Grand Rapids at Knapp’s Crossing, at 3251 Knapp St. NE, in mid September.

Franchisee Nathan Ashcraft signed a lease for the 1,800-square-foot space this month.

“Knapp’s Crossing and the surrounding area are growing quickly, and the new Freshii will be able to tap into that growth,” said Chris Prins, associate, Colliers International | West Michigan. “More and more people are looking for healthy options that are quick and convenient, and Freshii fulfills that need.”

First Grand Rapids location

The other Grand Rapids Freshii location is downtown in McKay Tower, 146 Monroe Center St. NW, and was opened by Ashcraft in December 2013.

“We received an overwhelmingly positive response when we opened our first Freshii in downtown Grand Rapids, so we thought it was time to expand with a second location that would reach more customers,” Ashcraft said.

Other Michigan locations

The Knapp’s Crossing Freshii will be the fifth in Michigan, with two in Detroit and another in Ann Arbor.


Freshii offers a variety of foods meant to provide “fresh and nutritious meal choices that energize people on the go.”

The restaurant features green wraps, salads, quinoa bowls and fresh-pressed juices.


Freshii opened its first location in 2005 in Toronto, as Matthew Corrin sought to brand the fresh food found at New York “mom-and-pop delis.”

The company now serves locations in more than 75 cities in 15 countries.

Freshii was a Top Franchise of the Year in Canada, and the chain said franchisees include an Olympic gold medalist, ex-NBA players and Harvard MBAs.

In 2013, the company also launched Fresh Startups, a technology accelerator. 

Corrin is an Ernst & Young Entrepreneur of the Year, a "Top 40 Under 40" in Canada and Inc. "Top 30 Under 30."
