Downtown Market announced Tuesday that a new bakery will be part of the 24 tenant indoor Market Hall.
Field & Fire is a high-end artisan bakery created by Shelby Kibler, who was formerly a manager, baker and product developer for the popular Zingerman’s bakery in Ann Arbor.
Types of bread
Field & Fire will create high quality organic artisan breads, flatbreads, pizzas and savory pastries, using a wood-fired oven and focusing on flavor, aroma and texture.
Kibler also intends to use all locally sourced ingredients for his products.
“The food scene in Grand Rapids is flourishing, with new craft breweries and farm-to-table restaurants, which makes it a great market for my style of artisan baking,” Kibler said. “Everything will be baked fresh, on-site, every morning. Imagine baskets filled with warm, crusty loaves right from the oven, crackling as they cool; it will add to the complete sensory experience within the Market.”

Kibler has more than 17 years of experience in the baking industry.
While at Zingerman’s, he launched several new products and served most recently as the principal of BAKE!, the company’s baking school.
He also has spent time baking professionally in Portland and California, as well as studying in Paris.
“Bread occupies a central role in our life and diet, and central to the Market’s role is to bring a greater diversity of food options to Grand Rapids,” said Mimi Fritz, president and CEO of the Market. “Shelby brings with him talent and experience, as well as a clear sense of how to teach his craft and engage the public. We are delighted he is choosing to create an entirely new business within our community of artisans.”
Being in Grand Rapids is a return home for Kibler, who was raised in West Michigan.
Downtown Market has named a handful of tenants so far: Crescent Floral & Gifts, Dorothy and Tony’s Gourmet Kettle Corn, Old World Olive Press, Love’s Ice Cream and Simpatico Coffee.
The outdoor portion of Downtown Market is scheduled to open on Saturday, May 4, with the indoor market following later in the summer.
In total, Downtown Market will offer 138,000 square feet of fresh produce, artisan food, local farms and entertainment.
